If I told you that the best pizza I have ever eaten, has been in Vietnam, would you believe it? Well, that’s true. Before heading back to Ireland, we went for pizza to the famous Pizza 4 P’s in Ho Chi Minh City (formerly named Saigon). The place is run by Japanese and indeed, they do know how to make a real Neapolitan pizza. We loved the Quattro Formaggi.
Inspired by this mouthwatering pizza from Pizza 4 P’s, I decided to recreate it here, in Galway. And where else could I get an artisanal cheese if not at Galway Market in Church lane…
My shopping-for-cheese mission was successfully accomplished. Wish you could smell it :)
Now, to make your own Four Cheese Pizza you need;
Buffalo Mozzarella cut into slices
grated White Cheddar
grated Galway Cumin Cheese
White cream sauce
1 tablespoon butter
3 tablespoons flour
1,5 cup milk
1/2 teaspoon garlic salt
1/2 teaspoon oregano
1/2 teaspoon basil
dash salt and pepper to taste
1/3 fresh Parmesan cheese
Dough for two 10-12 inch pizzas
1,5 cups warm water
2 teaspoons of dry yeast
3,5 cups bread flour
2 tablespoons olive oil
2 teaspoons salt
1 teaspoon golden caster sugar
To make pizza dough I always use Jamie Oliver’s recipe- please visit; Jamie’s pizza-dough. I find it easy and reliable!
To make the white cream sauce; melt butter in a saucepan, and add flour, stirring until thick. Then slowly add milk, whisking together to avoid lumps. Now add garlic salt, basil and oregano, salt and pepper and simmer for 5 minutes. Finally, stir in grated Parmesan until welted.
In the meantime, preheat the oven to 250C. Once your base is ready, transfer it to a floured surface and spread the sauce over it, leaving a 2cm border around the edge of each. Top the pizza with mozzarella, grated Cheddar, grated Galway cumin cheese and sprinkle with the Cashel Blue Cheese;
Bake the pizza for about 15 minutes or until golden brown;
Serve your Four Cheese Pizza hot and with honey, I guarantee you and your loved ones will love it! Enjoy!
