Pork & veggie meatballs – yummy healthy easy!

I have a lick-the-plate-good recipe for you today- pork& veggie meatballs. Prepare to be pleasantly surprised!

These meatballs are made with pork mince and packed with healthy veggies- grated so your kids won’t even notice them :) But what they will notice is the fact that the meatballs are incredibly moist thanks to the blue cheese.

They are simply perfect for a light dinner or party appetiser :)

Ingredients:

  • 400g pork mince
  • 1 egg
  • 1/2 cup fresh breadcrumbs
  • 1 carrot
  • thick slice of celery
  • spring onions
  • 3 garlic cloves minced
  • 1/2 teaspoon salt
  • 100g blue cheese (I find Cashel Blue best)
  • 1/2 cup Buffalo sauce, or any other spicy sauce you like
  • rice

Method:

Preheat the oven to 180C. Now mix pork mince with grated carrot and celery. Next add an egg, salt, chopped spring onions, minced garlic cloves and fresh breadcrumbs. Now crumble the blue cheese over and gently fold together to combine, but don’t overmix. Then form the mixture into small meatballs and place them on the baking tray.

Pork meatballs

Bake for 35 minutes. In the meantime cook rice in a boiling salted water for 18 minutes.
If the meatballs are golden enough, remove them from the oven and allow to cool for a few minutes.

Serve the meatballs with rice. Drizzle with the buffalo sauce if you like.
