Rhubarb pie time!

Ahhh what a busy week it was! I had an amazing opportunity to go to UK to develop my skills, not cooking this time though ;) But it was also a culinary trip РI kept updating you on Facebook and Instagram as you probably noticed.

This weekend, which was also incredibly busy, I couldn’t resist two things; tableware shopping- success! :) and baking! The result of the last one, below :)

Again, this is a very simple recipe of my beloved grandmother: Rhubarb pie!

  • 800 gr of plain flour
  • 1 cup of sugar
  • 2 tsp of baking powder
  • pinch of salt
  • 1 egg
  • 4 yolks
  • 1 sour cream ( 18% fat )

  • 1 kg of rhubarb
  • 100 gr of unsalted butter
  • 4 tbsp of sugar

Preheat the oven to 180C. Grease the base and the sides of the tin. Put the above ingredients into a bowl. Form a ball of dough. Chill it in the fridge for 1 hour. Now melt butter on the pan. Add rhubarb chopped into small pieces and sprinkle sugar over it. Cook under cover for 10 mins.
Spread 2/3 of the dough in the prepared tin. Now place rhubarb evenly and top it with 1/3 of the dough, please see picture below;

Bake in the oven for 50-60 minutes until golden brown.
