Great weather outside and I feel like eating healthy; light and colourful :)
Tonight, in our tiny kitchen I cooked pasta with spinach;
To serve this tasty pasta dish, you need;
- fresh baby leaf spinach
- freshly squeezed lemon juice
- unsalted butter
- fresh thyme
- fresh oregano
First, drop pasta into a pot of boiling, salted water and cook for 8-10 minutes;
In the meantime,melt some unsalted butter on a pan and add two minced garlic cloves.
Then add spinach, fresh oregano, fresh thyme and tomatoes cut in halves. At last, add some salt, pepper, lemon juice and simmer all for 8 minutes.
And your dinner is ready to be served;
Place pasta on a plate, then spread the veggie mixture and top it with prawns, feta cheese or parmesan.
I had it with prawns and loved it :)
